糖色玉是一种玉色，它是原生矿中的铁质逐渐变化而成的。铁含量和糖玉黄褐色色调有正相关关系，颜色越深铁的含量越高，铁元素在糖玉中以针铁矿形式分布于透闪石的颗粒间、微裂隙中，使糖玉呈现黄褐色。拉曼光谱显示糖玉表面少见红褐色矿物颗粒为金红石。
一块干净的糖玉，首先需要底子干净的白玉或者青玉，其次要在千万年铁元素变化过程中不被其他元素侵入。糖色越深，形成时间就越长，干净的糖肉就更加更加少，既要干净还要玉质出色的就是极其稀少。
